La Casa de Juliette will charm guests with its moody, dark woods, terracotta walls, and open-air coastal cantina ambiance, promising a modern yet intimate Latin dining experience. ”

Combining moody, dark woods and terracotta walls with the airy ambiance of a coastal cantina, La Casa de Juliette Mexican Cocina promises a modern yet intimate Latin experience. Drawing inspiration from traditional Mexican aesthetics and featuring a selection of contemporary local artwork, this restaurant will provide a vibrant and unique atmosphere along with exceptional hospitality in Northwest Las Vegas.

La Casa De Juliette aims to shift the way people look at culinary options in the northwest corner of the Valley.

Jamison’s grandmother, Julie Castillo, cooked Mexican food in the hours and days that she would babysit. “I loved Mexican food growing up,” says Jamison. “And then I went to culinary school so I’m French-trained. I thought blending French techniques with what I learned from Grandma Julie, it all made sense.”

In the same fashion as Jamison’s grandma, the enchiladas are prepared in tray pans rather than individually rolled, each layer meticulously built with house-made sauces and different proteins and cheeses.  “The menu is condensed to all winners—every dish, down to the rice and the beans has a lot of love and character,” says Grates.

La Casa de Juliette Mexican Cocina will open July 31, 2024.  in Centennial Hills, in the northwest corner of the Las Vegas Valley. Jamison, along with Chase Gordon and fellow Sand Dollar Lounge owner Nathan Grates, is going for bold yet unpretentious Mexican food with an imaginative cocktail program.

Visually, the interior design sets you in a Tulum-inspired space with basket lighting fixtures, dark wood details, terracotta-hued walls and hanging greenery galore.

“The bar is made to be like a shrine with gold and copper leaf all over,” Grates adds. “It’s kind of our place of worship—we love drinks and feel that it sets the energy for the rest of the room.”

While we’re talking drinks, co-owner Chase Gordon, who spearheaded the cocktail program at both Sand Dollar locations, has reimagined a number of classic regional Mexican concoctions for La Casa De Juliette.

“We found a lot of really great agave spirits outside the realm of tequila and mezcal that we’re going to be introducing to people up here, things like raicilla,” Gordon says.

Natural ingredients are the cornerstone of the cocktail offerings, with a large juicer ensuring all fruit extractions remain fresh throughout service.

the La Casa de Juliette Mexican Cocina craft cocktail menu will take center stage and push the boundaries of what a cocktail experience can be, while offering guests a wide range of fun, balanced, distinctive, and most importantly, delicious drinks. Featuring a creative fusion of unique spirits and fresh ingredients, with a strong emphasis on craft, the La Casa de Juliette cocktail program will be a central feature of the La Casa de Juliette Cocina experience.

The food menu is equally remarkable. Executive chef Eduardo “Lalo” Saavedra, an experienced chef with twenty years of work at Charlie Palmer Steak, and culinary development group Honest Hospitality joined forces to meticulously shape the team's vision.

“Chef Lalo brings the details that are missed when you’re raised in America. He’s bringing the real Mexican ingredients,” says Jamison. “None of us have ever heard of some of the things Lalo pulled out of his bag of tricks.”
